Banana and Date Bread

I love dates. I never used to, in fact I hated them and would pick them out whenever I encountered them. But then I found myself chewing on one mindlessly in the kitchen one day and couldn’t stop.

I also love banana bread. Who doesn’t? Well, apart from my Dad who can’t stand bananas in any form – just don’t tell him that they make an appearance in my carrot cupcakes, which he adores.  So combine the two and you’ve got a tasty, comforting loaf cake, ready to be sliced and snaffled when you need a little pick me up.

Banana and date loaf

175g plain flour

2 tsp baking powder

½ tsp bicarbonate of soda

125g butter, melted

150g light brown soft sugar

2 large eggs

3 medium very ripe bananas, mashed

100g pitted dates, chopped

 

Preheat the oven to 170c and line a 2lb loaf tin

Mix the melted butter and sugar in a bowl, add the eggs one at a time, beating well to incorporate.

Add the mashed bananas and chopped dates.

Mix in the flour, baking powder and bicarbonate of soda. Stir well, making sure that there are no pockets of flour left, you may need to scrape the sides of the bowl whilst doing this.

Pour into the prepared loaf tin and bake for 1-1 ¼ hours, until it is risen, golden and a sharp knife comes out clean.

Leave in its tin for 10 minutes and then finish cooling on a wire rack.

Lovely sliced still a little warm.
