You put what in your brownies?!

Odd combinations are not unusual in this house.  Well, it depends on your definition of odd really.  If you consider a cheese and jam sandwich to be unusual then you and I may need to sit down and have a chat.  To me, cheese and jam are a match made in heaven but for Rich it’s one of the most disgusting things he can think of.  I won’t tell you what he thinks of my peanut butter, cream cheese and jam sandwiches, especially with a sliced banana on there as well….

However, even I was a bit dubious when I saw a recipe for chocolate brownies in two magazines.  Nothing unusual at all in that you’d think but both called for the use of mayonnaise rather than butter.

 

Yep, mayonnaise.

 

Logically there shouldn’t be a problem.  After all, it’s essentially eggs and oil which are the cornerstone of many cakes.

 

It’s the thought of it.

 

Mayonnaise in a cake?!?!

 

You have to trust me when I say it works.  They turned out to still be rich and moist but somehow lighter at the same time.  I didn’t tell Rich there was anything different about them until after he had tasted them and he couldn’t detect any trace of mayo, even after I told him what the surprise addition was!

    I still can’t get my head around mayo in cake but am so with you on jam and cheese sarnies – though toasted takes it into heavenly territory!
